Bloat Free Peanut Butter Cookies

Makes 15 Cookies

Gluten Free

Low FODMAP

Vegetarian

Ingredients: 1½ cups gluten free self-raising flour⁠

½ cup unsalted butter at room temperature⁠

1 cup peanut butter⁠

½ cup brown sugar⁠

½ cup caster sugar⁠

1 tsp vanilla extract⁠

1 egg large⁠


Method:

  1. Preheat oven to 180ºc.

  2. Sift flour into a large bowl.⁠

  3. Cream butter and sugars using an electric beater.⁠

  4. Add peanut butter and mix until combined well.⁠

  5. Add egg and vanilla extract.⁠

  6. Add flour and beat until well combined.⁠

  7. Roll dough into 3cm balls and place on baking tray lined with baking paper.⁠

  8. Use a fork to flatten cookies in a criss-cross pattern.⁠

  9. Bake 10 minutes or until golden.⁠

  10. Allow cookies to completely cool on tray and then transfer to a cooling rack.⁠

Tips:

  1. To make this recipe dairy free, use a dairy free spread in the place of butter.⁠

  2. If your peanut butter in not salty you can add 1/4 tsp of salt to step 3.⁠
