Ingredients: 1½ cups gluten free self-raising flour
½ cup unsalted butter at room temperature
1 cup peanut butter
½ cup brown sugar
½ cup caster sugar
1 tsp vanilla extract
1 egg large
Method:
Preheat oven to 180ºc.
Sift flour into a large bowl.
Cream butter and sugars using an electric beater.
Add peanut butter and mix until combined well.
Add egg and vanilla extract.
Add flour and beat until well combined.
Roll dough into 3cm balls and place on baking tray lined with baking paper.
Use a fork to flatten cookies in a criss-cross pattern.
Bake 10 minutes or until golden.
Allow cookies to completely cool on tray and then transfer to a cooling rack.
Tips:
To make this recipe dairy free, use a dairy free spread in the place of butter.
If your peanut butter in not salty you can add 1/4 tsp of salt to step 3.
